Yes, you can still eat them. I once grew zucchini. There were times it was yellow, and there were times it was green, but big. Yes, I mean bigger than you'd ever see it in the market. This French heirloom summer squash is not available in grocery stores, because its skin bruises easily. Also called Ronde de Nice, it grows on compact bush type plants and produces 1 to 5" round fruits.
