It is a tender plant with tiny flowers and an abundance of fragrant leaves with a very true oregano flavor. This plant produces dark green leaves with white flowers, it starts out small, but grows to be a good sized bush (2 x 4 feet) and prefers well drained soil. This variety of oregano will winter over in mild areas of the north, if mulched properly, and works well as an ornamental. Best to plant indoors 4 - 6 weeks before transplanting outdoors in spring. Marjoram is cultivated for its aromatic leaves, either green or dry, for culinary purposes; the tops are cut as the plants begin to flower and are dried slowly in the shade. It is often used in herb combinations such as Herbes de Provence and Za'atar. The flowering leaves and tops of Marjoram are steam distilled to produce an essential oil that is yellowish in color (darkening to brown as it ages). It has many chemical components, some of which are borneol, camphor and pinene. Although considered cold-sensitive, marjoram can sometimes prove hardy even in zone 5.

Roman Camomile Anthemis nobilis [synonym: Chamaemelum nobile] Commonly known as Roman Camomile, Chamomile, garden camomile, ground apple, low chamomile, English chamomile, or whig plant, is a low perennial plant found in dry fields and around gardens and cultivated grounds. Chamomile Roman Chamaemelum nobile (Perennial) Chamomile is one of the oldest favorites amongst garden herbs and its reputation as a medicinal plant shows little signs of abatement. When walked on, its strong, fragrant scent will often reveal its presence before it is seen. For this reason it was employed as one of the aromatic strewing herbs in the Middle Ages, and used often to be purposely planted in green walks in gardens. Sweet Marjoram Spicy and aromatic perennial has square, branching stems and sometimes grows to the size of a small shrub. Likes to be sheltered in a warm, sunny spot. Water sparingly. Marjoram (Origanum majorana, Lamiaceae) is a somewhat cold-sensitive perennial herb or undershrub with sweet pine and citrus flavours. In some middle-eastern countries, The name marjoram (Old French majorane, Medieval Latin majorana) does not directly derive from the Latin word maior (major). Marjoram is indigenous to the Mediterranean area and was known to the Greeks and Romans as a symbol of happiness. Marjoram is cultivated for its aromatic leaves, either green or dry, for culinary purposes; the tops are cut as the plants begin to flower and are dried slowly in the shade. It is often used in herb combinations such as Herbes de Provence and Za'atar. The flowering leaves and tops of Marjoram are steam distilled to produce an essential oil that is yellowish in color (darkening to brown as it ages).
